Lasagna

 

Lasagna


Sauce:

one package of kroger sweet italian sausage (18oz), cooked, drained

half an onion, diced

one clove garlic, pressed

one small serrano pepper, diced very tiny

olive oil, about a tablespoon or two

12 fresh basil leaves, chopped fine

one 15 oz can petite diced tomatoes

one 15 oz can tomato sauce


Cheese mixture:

¼ cup fresh parsley, chopped fine

15 oz ricotta cheese

two eggs, beaten really well

½ cup parmesan cheese, grated fine


9 lasagna noodles, prepared per the package they came in


6 oz package provolone cheese slices


If the sausage is in links, remove the casings.  In a large skillet or pot, brown the sausage and break into small pieces.  Drain the grease and liquid from the sausage and return to pan. Add onion, garlic, serrano, olive oil, basil, tomatoes and tomato sauce.  Salt and pepper to taste.  Let simmer for 45 minutes, then remove from heat.


Mix the cheese mixture ingredients in a bowl and return to the refrigerator.


Boil the noodles as specified on the package.


Build the lasagna in a 9x13 pan, sprayed with a little olive oil.  From the bottom up:


  • a layer of three noodles across the pan

  • cheese mixture, spread thin across the noodles

  • four slices of provolone

  • sauce


Repeat two more times. You should have enough ingredients to build three layers.


Bake at 375 for 30 minutes.  Let it rest for at least 10 minutes before serving.
